    Based on a Mexican recipe this black bean soup is easy to make as well as being healthy, tasty and something a bit different.

    Ingredients
    Serves: 4 

    • 1 green capsicum, diced
    • 2 spring onions, sliced
    • 3 cloves garlic, finely diced
    • 2 teaspoons oil
    • 1 (400g) tin black beans, rinsed and drained
    • 1 1⁄2 cups (375ml) salt reduced chicken stock
    • 1 teaspoon each ground coriander and cumin
    • 2 tablespoons light sour cream
    • 1⁄4 cup diced tomato

    1. In saucepan, sauté capsicum, spring onions and garlic in oil until soft.
    2. Add black beans, chicken stock, coriander and cumin. Simmer for 5 minutes.
    3. In food processor, purée half the soup and return to pan; reheat soup. Top with sour cream and tomato.
