Black Bean Soup

Based on a Mexican recipe this black bean soup is easy to make as well as being healthy, tasty and something a bit different.
1 green capsicum, diced
2 spring onions, sliced
3 cloves garlic, finely diced
2 teaspoons oil
1 (400g) tin black beans, rinsed and drained
1 1⁄2 cups (375ml) salt reduced chicken stock
1 teaspoon each ground coriander and cumin
2 tablespoons light sour cream
1⁄4 cup diced tomato
- In saucepan, sauté capsicum, spring onions and garlic in oil until soft.
- Add black beans, chicken stock, coriander and cumin. Simmer for 5 minutes.
- In food processor, purée half the soup and return to pan; reheat soup. Top with sour cream and tomato.
