One of the most popular snack fruits, apples supply vitamin C as well as some potassium. Eat the peel to get the full measure of fibre. Pears are also a good source of fibre.

Serves: 4 

  • 4 green apples
  • 2½ tablespoons butter, at room temperature
  • 3 tablespoons sultanas
  • 1/4 cup raisins
  • 2 teaspoons mixed spice
  • 5 teaspoons julienned orange zest
  • 1/3 cup orange juice
  • 1/3 cup light brown sugar
  • 1/3 cup brandy

  1. Preheat the oven to 175°C. Core the apples, score the top in a cross, then make a slit in the skin around the centre of each one with a small knife.
  2. Combine the butter, sultanas, raisins, mixed spice and orange zest in a medium bowl. Stuff the centre of each apple with this mixture, then sprinkle with the orange juice and sugar.
  3. Arrange the apples in a baking dish, along with 2/3 cup water. Pour 1 tablespoon brandy over each apple and bake for 45 minutes to 1 hour, until the apples are soft and the sugar is caramelised. Pour a little of the sauce over each apple and serve immediately.
