Fruit and fruit juices are among the best food sources of potassium, which helps to lower blood pressure.

Serves: 4 

  • 330 ml orange juice
  • finely grated zest and juice of 1 lemon
  • 2 tablespoons clear honey
  • 2 teaspoons vanilla extract
  • 1 whole clove
  • 8 fresh apricots, halved
  • 2 firm but ripe pears, quartered
  • 2 tablespoons raisins

  1. In a saucepan, combine the orange juice, lemon zest and juice, honey, vanilla extract and clove. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  2. Add the apricots and pears and bring back to the boil. Reduce the heat, cover and simmer for 5–8 minutes or until the fruit is just tender.
  3. Add the raisins, then remove the pan from the heat. Leave the fruit to cool to room temperature in the syrup. Remove the clove before serving.

So much honey and raisins makes this a dubious dish for a diabetic. I won't try it. - 22 Feb 2009
