In a saucepan, combine the orange juice, lemon zest and juice, honey, vanilla extract and clove. Bring to the boil, then reduce the heat and simmer for 5 minutes.
Add the apricots and pears and bring back to the boil. Reduce the heat, cover and simmer for 5–8 minutes or until the fruit is just tender.
Add the raisins, then remove the pan from the heat. Leave the fruit to cool to room temperature in the syrup. Remove the clove before serving.
