The ultimate breakfast toasted sandwich - you may need a knife and fork! You will also need a toasted sandwich maker, though you could just fry the sandwich in a frypan.

Ingredients
Serves: 2 

  • 5 slices of bread
  • butter (enough to butter 4 slices of bread)
  • 1 tomato
  • 1 mushroom
  • 2 rashers of bacon
  • 2 eggs
  • 1 small tin of baked beans
  • 50g cheese, grated (more or less as desired)

Directions
Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Butter four of the slices of bread on both sides and cut the fifth slice into small chunks
  2. Slice the tomato and mushroom.
  3. Grill bacon and tomato then chop the bacon into small pieces.
  4. Fry the eggs, and fry the mushroom and small chucks of bread.
  5. Heat the baked beans.
  6. Switch on toasted sandwich maker or warm up the jaffle iron.
  7. When it's heated, put two slices of bread in the bottom (assuming it’s a two-sandwich jaffle maker)
  8. Place the eggs on top of that and lay the mushroom and tomato slices on top of the egg around the yolk Add the baked beans and sprinkle pieces of fried bread and bacon on top. Sprinkle grated cheese over top.
  9. Put last 2 slices of bread on top and close sandwich maker - you may need to hold it closed.
  10. After 3 - 4 minutes - depending on sandwich maker – the sandwiches will be cooked
  11. Serve with tomato sauce...happy breakfast!
