Honey Lemon Grape Salad

    This is a delicious grape salad with a sweet and zesty dressing of honey and lemon. Very refreshing in summer.

    Serves: 8 

    • Salad
    • 600g seedless grapes
    • 2 tablespoons finely chopped parsley
    • 1 cup (250ml) fresh squeezed lemon juice
    • 1 tablespoon lemon zest
    • 2 teaspoons honey
    • Dressing
    • 2 cups (500ml) grape juice
    • 3 tablespoons honey
    • 3 tablespoons mayonnaise
    • 4 tablespoons freshly squeezed lemon juice
    • 4 teaspoons water

    1. Salad: Put the grapes in a medium sized mixing bowl. Sprinkle some chopped parsley on the grapes and then pour in lemon juice. Mix them all together with a wooden spoon. Also add lemon zest and 2 teaspoons of honey.
    2. Dressing: For the dressing: pour grape juice into another bowl. Put 3 tablespoon of honey and 5 spoons of mayonnaise along with the remaining lemon juice (freshly squeezed). Add 2 spoons of water if the dressing is too thick. Mix all of them together.
    3. Pour the grape dressing over the salad, toss and serve cold.

    I used half red and half green grapes for color. I wanted a grape salad for an Easter dinner and this was the closest I could find to what I had in mind. The dressing was the real issue with this recipe! The flavor was nice; very fresh and citrusy, not too sweet but a good contrast to the grapes, with the lemon and honey. The problem was that there was way too much of it, and it was so runny that if I had served it as instructed we would have eated the salad out of bowls with spoons! I ended up pouring half of it down the drain, then adding several more spoonfuls of mayo to the dressing to thicken it. That helped, but as we were running out of time to put dinner on the table it wasn't quite to my satisfaction. Still too runny, and the leftovers didn't get eaten.
