    Colourful and pretty biscuits ever popular with children. Any flavour fruit jam can be used.

    Ingredients
    Serves: 10 

    • 3/4 cup plain flour
    • 50g butter
    • 1/4 cup caster sugar
    • 2 tablespoons almond meal
    • 1 large egg
    • 300g raspberry jam
    • icing sugar, for dusting

    Directions

    1. Preheat oven to 200C. Grease baking trays.
    2. Sift the flour into a bowl and rub in the butter. Mix in the almond meal. Using a fork, mix in the egg until dough becomes stiff.
    3. Knead dough on a lightly floured surface until smooth. Roll out dough into a thin layer and cut into 5cm rounds (alternatively, cut into rectangles). Re-roll trimmings and cut until you have 20 rounds. Place rounds on baking trays.
    4. Bake for 12 minutes or until light brown. Cool on tray for 3 minutes before transferring to wire racks to cool completely.
    5. Spread half of the biscuits with a thin layer of jam. Sandwich together with remaining biscuits. Dust with icing sugar.
