Custard Biscuits

    Custard powder gives these biscuits extra richness. Try sandwiching two together with jam or a buttercream icing.

    Serves: 12 

    • 225g butter or margarine
    • 150g sugar
    • 1 large egg
    • 300g self raising flour
    • 50g custard powder
    • 1 pinch of salt
    • jam and/or buttercream icing for filling

    1. Preheat the oven to 180 degrees C.
    2. Beat butter or margarine with sugar in a large bowl until very soft. Mix in the egg then stir in the flour, custard powder and salt. Roll out dough and cut out circles. Place biscuits onto a baking tray.
    3. Bake in the preheated oven for 10 minutes. Remove from the baking tray and allow to cool on a rack. Sandwich cooled biscuits together with a small amount of jam or buttercream icing. Dust finished biscuits with icing sugar.

    Really simple to make, I rolled the dough out between 2 sheets of baking paper as it was a little sticky.  -  11 Sep 2013
