Hearty Cabbage and Potato Soup

You might not suspect a cabbage soup could be so tasty and satisfying. You can of course adjust the amount of chilli to your own taste.

Ingredients
Serves: 4 

  • 1 medium onion, quartered and thinly sliced
  • 3 medium cloves garlic, chopped
  • 1-2 teaspoons minced fresh chilli
  • 1 tablespoon dry mustard powder
  • 2 teaspoons ground coriander
  • 5 cups (1.25L) vegetable stock
  • 2 tablespoons fresh lemon juice
  • 2 medium sized potatoes, diced
  • 1 (400g) tin diced tomatoes
  • 3 cups sliced cabbage
  • salt and black pepper to taste

Directions
Preparation:20min  ›  Cook:25min  ›  Ready in:45min 

  1. Heat 1 tablespoon stock in a medium soup pot. Saute sliced onion over medium heat for about 5 minutes. Stir in garlic and minced chilli. Continue to saute for another minute.
  2. Stir in ground coriander and mustard, and add stock and rest of ingredients except cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until potatoes are tender.
  3. Add cabbage and cook for another 5 minutes. Season with salt and pepper to taste.
