Hearty Cabbage and Potato Soup

You might not suspect a cabbage soup could be so tasty and satisfying. You can of course adjust the amount of chilli to your own taste.
1 medium onion, quartered and thinly sliced
3 medium cloves garlic, chopped
1-2 teaspoons minced fresh chilli
1 tablespoon dry mustard powder
2 teaspoons ground coriander
5 cups (1.25L) vegetable stock
2 tablespoons fresh lemon juice
2 medium sized potatoes, diced
1 (400g) tin diced tomatoes
3 cups sliced cabbage
salt and black pepper to taste
- Heat 1 tablespoon stock in a medium soup pot. Saute sliced onion over medium heat for about 5 minutes. Stir in garlic and minced chilli. Continue to saute for another minute.
- Stir in ground coriander and mustard, and add stock and rest of ingredients except cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until potatoes are tender.
- Add cabbage and cook for another 5 minutes. Season with salt and pepper to taste.
