Sweet Aniseed Pancakes

    This delicious pancakes are a sweet Indian style snack. Enjoy hot as a dessert with an Indian meal, or for breakfast with a cup of chai tea!

    Serves: 3 

    • 2 cups (250g) wholemeal pastry flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon aniseed
    • 1/2 cup (125g) white sugar
    • 1 cup (250ml) water
    • 1/3 cup (85ml) whole milk
    • Oil for shallow frying

    1. In a bowl, mix together the flour, baking soda, aniseed and sugar. Mix the water and milk and add to the dry ingredients to make a smooth and fairly runny batter.
    2. Heat a non stick frying pan over medium heat until fairly hot. Add 1 tablespoon of oil, and then about two ladlefuls of batter, swirling the pan to spread the batter all the way to the sides of the pan. Cook for about two minutes, then add another tablespoon of oil, trickling it all around the side of the pan. Turn the pancake over and cook the other side until browned and crispy at the edges.
    3. Repeat with the rest of the batter. Serve hot.
