Sausage Casserole with Capsicum

This recipe is very hearty and satisfying and can also be made a day in advance -just pop in the oven for 1/2 hour to reheat the next day.


Serves: 4 

  • 1 tablespoon olive oil
  • 8 good quality sausages
  • 1 red onion, diced
  • 1 green capsicum, diced
  • 1 clove garlic, minced
  • 1 teaspoon tomato paste
  • 1 teaspoon marmite
  • 200ml beer (lager or bitter will work)
  • 100ml beef stock

Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

  1. Preheat the oven to 180C.
  2. In a large frypan heat the oil, then add the onion and garlic and saute for 2-3 minutes. Add the capsicum and saute for a further 2-3 minutes.
  3. Add the sausages to the pan and brown on all sides.
  4. In a jug mix together the stock, beer, tomato paste and marmite (stock will have to be hot to melt the marmite). Add the stock mixture to the pan and simmer for 15 minutes.
  5. Transfer the stew to a casserole dish and cook in the oven for 30-40 minutes, until gravy has thickened.
