Simple Pilaf

    This a a simple and fragrant rice side dish, perfect with curry or other Indian food. If you don't have a mortar and pestle or a spice grinder, you can substitute with powdered cinnamon and cloves.

    Serves: 2 

    • 200g basmati rice
    • 1 tablespoon olive oil
    • 1/2 cm cinnamon stick
    • 3 cloves
    • 1/2 tablespoon turmeric
    • 400ml water

    1. Wash and rinse the rice a few times.
    2. Heat the oil in a nonstick pan over a medium heat. While the oil is heating, use a a pestle and mortar to grind the cinnamon and cloves into a powder. Add to the oil and leave it for half a minute, or until fragrant.
    3. Add the washed rice and turmeric powder and stir fry for 3 minutes.
    4. Add all the water and bring to the boil. Simmer on low heat with the lid on, stirring every few minutes, until rice has soaked up all the water and is cooked through. Add more water if necessary. The rice should be dry with separate grains. Serve immediately!
