This is a wonderful side dish for a Christmas feast. It's important to use good quality sausages for the best flavour.
1 large onion, diced
1 teaspoon herbes de Provence (mixed herbs)
450g good quality sausages (skin removed)
1/2 loaf crusty bread or a day-old baguette, processed into breadcrumbs
- Preheat the oven to 180 degrees C.
- Melt the butter in a large saucepan over medium heat. Fry the onion until it starts to soften, add the herbs but be careful not to burn the butter.
- Add sausage meat and breadcrumbs to saucepan and stir until evenly blended. Transfer to an ovenproof dish.
- Bake in the preheated oven for 30 minutes or until the top goes brown and crunchy.
