    This is a wonderful side dish for a Christmas feast. It's important to use good quality sausages for the best flavour.

    Serves: 6 

    • 125g butter
    • 1 large onion, diced
    • 1 teaspoon herbes de Provence (mixed herbs)
    • 450g good quality sausages (skin removed)
    • 1/2 loaf crusty bread or a day-old baguette, processed into breadcrumbs

    1. Preheat the oven to 180 degrees C.
    2. Melt the butter in a large saucepan over medium heat. Fry the onion until it starts to soften, add the herbs but be careful not to burn the butter.
    3. Add sausage meat and breadcrumbs to saucepan and stir until evenly blended. Transfer to an ovenproof dish.
    4. Bake in the preheated oven for 30 minutes or until the top goes brown and crunchy.
