A simple and easy icing to do when you have a bunch of cupcakes to decorate or when you have children over for a party and you like them to decorate their cupcakes themselves. You can also melt the chocolate in the microwave.
280g white chocolate, chopped
1 1/8 cups (280ml) sour cream

Melt the white chocolate in a heatproof bowl set on top of a saucepan filled with five centimetres of simmering water. Stir occasionally, and remove from the heat before it is completely melted. Stir until smooth.
Allow to cool until almost starting to set, then stir in sour cream. It is now ready to use. For a fluffier icing, allow to cool completely then beat with an electric mixer.
LOVED this icing on chocolate cake to make it a special occasion cake. Almost like cream cheese icing, but nicer. Used low fat sour cream and cooking grade white chocolate and these worked fine. Suppose would be even more amazing with top quality white chocolate. - 05 Apr 2010
