New potatoes are wonderful when they are coming into season. Here's a recipe for them with red onions and fresh coriander.

Ingredients
Serves: 4 

  • 1 tablespoon ghee
  • 1 medium sized red onion
  • 3 tablespoons fresh coriander
  • 3 tablespoons curry paste
  • 700g new potatoes
  • 1 tin (410g) chopped tomatoes
  • 1 cup (250ml) boiling water.
  • salt and black pepper

  1. Chop the onion and dice the potatoes.
  2. In a large frying pan, cook the onions and coriander in the ghee over medium heat until soft. Add the curry paste.
  3. Add potatoes, stir until well mixed, then add water, cover and cook until the potatoes are very tender (Around 1 hr 45mins), stirring every 15 minutes.
  4. Add salt and pepper to taste, then serve.
