    This is a traditional, and simple Spanish breakfast that is healthy and a great energy boost. For speed, keep a tub of grated tomatoes mixed with a little olive oil in the fridge. Don't store the mixture with the garlic added, unless you want a really potent garlic taste.

    Serves: 2 

    • 2 tomatoes
    • 2 teaspoon olive oil
    • salt to taste
    • 1 clove garlic
    • 1 french bread stick

    1. Slice the french bread lengthways and grill until toasted.
    2. Gently rub the garlic clove over the toasted bread.
    3. Cut the tomatoes in half, and grate over the toasted bread. Drizzle on the olive oil. Sprinkle on salt to taste.
