Spaghetti with Curried Prawn Sauce

This is a deliciously creamy seafood pasta which is sure to get rave reviews from your guests. Chilli is optional as there will still be a kick from the curry powder.


Serves: 6 

  • 1 tablespoon oil
  • 500g spaghetti
  • Chopped fresh parsley to garnish
  • Sauce
  • 60g butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon chilli flakes or to taste (optional)
  • 500g uncooked prawns, shelled and deveined
  • 100ml white wine
  • 400g can peeled tomatoes, crushed
  • pinch black pepper
  • 2 teaspoons curry powder
  • 300ml thickened cream
  • 2 tablespoons grated Parmesan cheese

  1. Melt butter and saute garlic and chilli flakes (optional) until soft. Add prawns and cook until pink. Remove prawns from heat and set aside. Add wine, tomatoes, seasonings, cream and cheese. Simmer for 10 minutes.
  2. Meanwhile, prepare pasta: bring a large pan of water and the oil to the boil. Add spaghetti and cook until tender but still firm. Drain, rinse under warm water and drain again. Return to pan. Add prawn sauce and toss over low heat for 1-2 minutes. Serve garnished with parsley and extra Parmesan if desired.
