This is a technique to make good olive oil taste even more special. The vinegar helps to preserve the oil and it gets tastier with time.


Serves: 20 

  • 250g green olives
  • 1/2 cup (125ml) olive oil
  • 1/2 cup (125ml) sunflower oil
  • 5 leaves fresh basil
  • 1 tablespoon oregano
  • 2 garlic cloves (crushed)
  • 1 teaspoon vinegar
  • 1/2 teaspoon chilli flakes

  1. Put olives in a jar and mix with olive oil and sunflower oil. Add all the other ingredients.
  2. Leave to set for at least 3 or 4 days sealed tightly in the jar before using with your favourite salad.
