Make this delectable ice cream in your ice cream maker - it is sure to be a hit! You may need to halve the recipe depending on the size of your ice cream maker.


Serves: 12 

  • 4 cups (1 litre) cream
  • 4 cups (1 litre) milk
  • 2 cups (440g) white sugar
  • 2 1/2 cups (310g)chopped walnuts
  • 1 tablespoon vanilla essence
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Preparation:35min  ›  Cook:45min  ›  Ready in:1hour20min 

  1. In a large bowl, stir together the cream, milk, sugar, walnuts, vanilla, cinnamon and salt. Cover and refrigerate for 30 minutes.
  2. Pour the mixture into the bowl of an ice cream maker and freeze as directed by the manufacturer.

This is a wonderful ice cream with just the right amount of cinnamon. I used 1% milk so it wasn’t as creamy as it could have been, but that can be easily adjusted by increasing the heavy cream and reducing the milk. Next time I will mix the cinnamon and sugar together before adding it to the additional ingredients so that the cinnamon incorporates easily. Although good on its own, this would be perfect with apple pie or apple crumble. - 03 May 2013
