Lassi is a good thick drink that can serve equally well as a drink or a dessert. Perfectly refreshing on a hot summer day.
10 ripe strawberries, rinsed
2 tablespoons white sugar
1/4 cup milk
1 cup low-fat yoghurt
1/2 cup ice cubes

Finely chop 3 of the strawberries and set aside. Place the remaining strawberries and sugar in a blender and whiz on high speed for 30 seconds. Pour in the milk and yoghurt and whiz on high speed for 1 minute.
Place ice cubes in serving glasses and pour in the lassi. Top with the reserved strawberry pieces and serve.
While I like this recipe cos its good to break up the yoghurt a bit with the milk Lassi still should be a little tart and the strawbs are sweet enough as is. So I used less than half the sugar and that was good. - 20 Apr 2010
