Pumpkin Pasta Sauce

Fed-up with tomato and cream based sauces on you pasta? Try this pumpkin one that one of my vegetarian friends put me onto. Great on gnocchi too.

Serves: 2 

  • 1 tablespoon butter
  • 2 leaves fresh sage, whole
  • 1 or 2 cloves garlic, whole
  • 200g pureed pumpkin
  • 1/2 cup (125ml) milk
  • 1/4 cup grated parmesan cheese
  • salt and pepper, to taste
  • 1/2 teaspoon grated nutmeg

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Melt butter in saucepan over medium-low heat.
  2. Add sage and garlic then saute for 1 minute.
  3. Add pumpkin then stir constantly until pumpkin is heated through.
  4. Slowly add milk while stirring pumpkin mixture constantly. Simmer on low heat for 5 minutes.
  5. Add grated cheese, salt, pepper and nutmeg then stir. Add more milk if sauce is too thick.
  6. Take out garlic and sage and discard.
  7. Toss sauce with gnocchi or pasta and serve with more grated cheese if desired.
