Cod and Vegetable Crumble Bake

    50 minutes

Lovely creamy baked cod crumble with a crusty topping. It's a meal in itself but great with a bright crispy salad.

    6 people made this

    Serves: 2

    • 2 cod fillets
    • 2 tablespoons spreadable cream cheese – plain or flavoured
    • 1 tablespoon pine nuts (optional)
    • 2 garlic cloves, chopped and divided
    • 4 mushrooms, sliced
    • 1/2 onion chopped
    • 200g baby spinach leaves
    • 100g grated Cheddar cheese
    • 4 tablespoons dried breadcrumbs
    • 1 tablespoon dried Italian herbs
    • 2 tablespoons grated Parmesan cheese
    • 1 lemon, sliced

    1. Preheat the oven to 180 degrees C.
    2. Lay out cod fillets. Spread thin layer of cream cheese onto each one. Top with a layer of pine nuts and half the chopped garlic, a layer of mushrooms, a layer of chopped onions, a layer of baby spinach and finally a layer of Cheddar cheese-use half the cheese.
    3. Bake in the preheated oven for 15 minutes.
    4. Add another layer of the rest of the cheese and bake for further 5 minutes. Mix together the remaining chopped garlic, the breadcrumbs, dried herbs, and Parmesan cheese. Continue to bake until the top is browned, about 1 more minute. Serve with sliced lemon.
