Roast Cherry Tomato Soup

This is a beautiful creamy cherry tomato soup that is easy to make. The tomatoes along with some celery and garlic is roasted, pureed then mixed with sour cream.


Serves: 2 

  • 4 cups cherry tomatoes
  • 2 celery sticks, left whole
  • 4 cloves garlic, whole and unpeeled
  • 150g sour cream
  • 1 tablespoon extra virgin olive oil

Preparation:15hours  ›  Cook:1hour10min  ›  Ready in:16hours10min 

  1. Place tomatoes, celery and garlic in a roasting tin then drizzle with olive oil.
  2. Cook in a preheated oven on 200 degrees C for 1 hour.
  3. When roasted remove from oven and leave to cool.
  4. Blend in a blender until smooth.
  5. Pour into a saucepan and add the sour cream.
  6. Heat until bubbling then serve.
