Vegetarian Bolognaise

    This is a fairly traditional bolognaise except I use Quorn instead of mince. I have served it to a few people now and they didn’t even guess it was vegetarian.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil
    • 1 medium sized red onion, diced
    • 2 teaspoons dried or diced fresh oregano
    • 1 (400g) tin diced tomatoes
    • 350g Quorn mince
    • 300ml strong vegetable stock
    • 1 dash Worchester sauce
    • salt and pepper, to taste

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat the olive oil in a large saucepan on a medium heat.
    2. Add the onions and oregano then cook until the onions are soft.
    3. Add the tin of diced tomatoes then stir through and cook for a couple of minutes.
    4. Add Quorn, stock and worchester sauce then cook until thickened to preference. Season to taste and serve.
