Brussel Sprouts and Olives

    This is a basic side dish recipe that I use to add colour and flavour to the dinner plate. I started making it because my kids loved olives and hated brussel sprouts but must eat both.

    Serves: 4 

    • 300g brussel sprouts
    • 10 kalamata olives, pitted and sliced
    • ground pepper, to taste
    • pepper, to taste

    1. Briefly cook brussel sprouts in boiling water then cut them into halves.
    2. In another saucepan add the olive slices and the halved sprouts. Add water to about a quarter of the height of the sprouts. Simmer in low heat until tender.
