Stuffed Apples

    Why bake an apple when you can stuff and chill them then slice them into a super healthy snack. These apples are stuffed with penut butter, honey, sultanas and chocolate; once you get the hang you can try your own versions.

    Serves: 24 

    • 1/4 cup peanut butter
    • 1 1/2 teaspoons honey
    • 1/2 cup miniature dark chocolate chips
    • 2 tablespoons sultanas
    • 4 Red Delicious apples, cored

    Preparation:20min  ›  Extra time:1hour chilling  ›  Ready in:1hour20min 

    1. In a bowl combine peanut butter and honey.
    2. Fold in the chocolate chips and sultanas.
    3. Fill centre of apples with peanut butter mixture.
    4. Refrigerate for at least 1 hour.
    5. Cut into 6mm rings and serve.

    I filled cored apples as directed. My girls thought this was really fun, but the juice from the apples made the peanut butter want to fall out. So, the second time, I just mixed the peanut butter, honey and mini-chocolate chips in a small bowl and let them dip wedges in it.
