    Make this early in the day and keep in the refrigerator to let the flavors blend and intensify. Add more mint to taste, but do not substitute dried mint; the flavour is just not the same.

    Ingredients
    Serves: 12 

    • 2 Lebanese cucumbers - peeled and thinly sliced
    • 2 cups Greek yoghurt
    • 3 tablespoons lemon juice
    • 2 tablespoons chopped fresh mint
    • 1/2 teaspoon white sugar
    • 1/4 teaspoon sea salt

    Directions

    1. Stir together the cucumber, yoghurt, lemon juice, mint, sugar, and salt in a bowl. Cover and refrigerate at least 3 hours, preferably overnight.

    made this with Lime Juice, cucumber, salt, mint and unsweetened plain yoghurt from Harris Farm Markets, then added a teaspoon of my own homemade mint and apple jelly instead of the sugar. Used only two tablespoons of Yoghurt to a whole cucumber and the juice of one lime. So really not this recipe at all but I have to say it was awesome - served with Tandoori Chicken and rice accompanied by the classic sliced raw onion and tomato as a side. Took about 5 mins all up including going down to garden and picking the mint. - 20 Mar 2013

    Good solid basic recipe. I don't think it needs sugar though. I do like to add some birds eye chili for some heat and coarsely grate the cucumber. Besides my homegrown mint, I added some of my homegrown basil. Lime juice works well too. Thanks for posting!!!! - 30 Aug 2013
