Microwave Fruit Dumpling

    This is a Scottish fruit pudding that doesn't require hours of boiling, but just ten minutes in the microwave.

    Serves: 8 

    • 1 cup (250ml) water
    • 150g sugar
    • 1 tablespoon mixed spice
    • 1 tablespoon cinnamon
    • 225g chopped mixed dried fruit
    • 200g sultanas
    • 225g butter
    • 2 cups (250g) sifted plain flour
    • 1 teaspoon bicarb soda
    • 2 eggs, beaten

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a saucepan, combine the water, sugar, mixed spice, cinnamon, mixed fruit, sultanas and butter. Bring to a boil and let simmer for one minute. Remove from the heat and stir in the flour, bicarb soda and eggs. Pour into a microwave-safe bowl.
    2. Place the bowl into the microwave, uncovered. Cook for 10 minutes on full power. Let stand for 5 minutes. Serve warm with your favorite custard.

    We steamed this pudding because I thought it was more like a steamed pudding than a cake. I don't have a microwave. I made it in individual servings, like I make brown bread.
