Spicy Chicken Bread Rolls

    These take a little while to make but are worth the effort. A homemade bread roll has a spicy chicken filling which is great for packed lunches or picnics.

    Serves: 6 

    • 3/4 (90g) strong bread flour
    • 3/4 (90g) wholemeal flour
    • 1 packet dried yeast
    • 200ml warm water
    • 1/2 red capsicum
    • 200g chicken, diced
    • 10g butter low fat spread
    • 25g flour
    • 1/2 cup (125ml) lite milk
    • 1 tablespoon tabasco sauce
    • 1 (400g) tin tomatoes
    • sesame seeds
    • 1 chilli finely sliced
    • 1 egg yolk

    1. In a bowl add both flours and the yeast. Make a well and pour in warm water
    2. Knead for ten minutes until you have a smooth dough.
    3. Slice the red capsicum then cook in saucepan with no oil until soft and black around edges.
    4. Cook chicken in a saucepan until no pink remains.
    5. Melt butter in a separate saucepan then add flour, milk, tabasco sauce and tinned tomatoes. Keep stirring until thick then add chicken.
    6. Divide dough into 12 balls.
    7. Flatten 6 balls then put the char-grilled capsicum at bottom; then chicken with sauce on top; then place sliced chilli; then get other piece of dough and place over the top to seal.
    8. Glaze with egg yolk then sprinkle with sesame seeds.
    9. Place in top of oven for 10 minutes to rise.
    10. Remove risen rolls then heat the oven to 200 degrees C.
    11. Cook for 10 to 15 minutes.
