Avocado Pudding with Pandan Custard

    This is an unusual dessert but worth giving a go. A jelly like pudding is made from avocado and coconut milk then served with a pandan and coconut milk custard.

    Serves: 4 

    • Pudding
    • 150g avocado
    • 50ml water
    • 1/2 packet agar powder
    • 60g white sugar
    • 50ml water
    • 200ml condensed coconut milk
    • 1 teaspoon instant coffee
    • 2 tablespoons hot water
    • green food colouring
    • Custard
    • 50ml water
    • 50g white sugar
    • 3 pandan leaves
    • 200ml condensed coconut milk
    • 1 1/2 teaspoons cornflour
    • 2 tablespoons water
    • 1 egg yolk

    1. Pudding: Mix avocado and water then blend in a smoothie maker.
    2. Mix agar powder, sugar, water and coconut milk then boil in a saucepan; add avocado.
    3. Mix coffee powder with hot water then add to the mix.
    4. Add green food colouring.
    5. Pour mixture into a jelly mould or into glasses then refrigerate.
    6. Custard: Boil water, sugar, pandan leaves and coconut milk.
    7. Add cornflour mixed with 2 tablespoons water and egg yolk; mix well.
    8. Refrigerate custard and pour on top of pudding upon serving.
