This is an unusual dessert but worth giving a go. A jelly like pudding is made from avocado and coconut milk then served with a pandan and coconut milk custard.

Ingredients
Serves: 4
Pudding
150g avocado
50ml water
1/2 packet agar powder
60g white sugar
50ml water
200ml condensed coconut milk
1 teaspoon instant coffee
2 tablespoons hot water
green food colouring
Custard
50ml water
50g white sugar
3 pandan leaves
200ml condensed coconut milk
1 1/2 teaspoons cornflour
2 tablespoons water
1 egg yolk
Directions Preparation:15min › Extra time:1hour chilling › Ready in:1hour15min
Pudding: Mix avocado and water then blend in a smoothie maker.
Mix agar powder, sugar, water and coconut milk then boil in a saucepan; add avocado.
Mix coffee powder with hot water then add to the mix.
Add green food colouring.
Pour mixture into a jelly mould or into glasses then refrigerate.
Custard: Boil water, sugar, pandan leaves and coconut milk.
Add cornflour mixed with 2 tablespoons water and egg yolk; mix well.
Refrigerate custard and pour on top of pudding upon serving.
