Melt butter in large saucepan. Add tomatoes, garlic and rosemary. Season with salt and pepper to taste. Add sugar to taste to heighten sweetness of tomatoes.
Simmer for 5 minutes then add sliced chorizo, chilli, cream and half the parsley.
Simmer until the mixture has reduced by about half; stirring frequently.
Season to taste and serve with cooked pasta of any shape and garnish with the remaining parsley and parmesan cheese. Fantastic!!
