Chorizo Pasta Sauce

Spanish chorizo sausage adds a mild smokey flavour to this simple and stunning pasta sauce. Creamy and lovely.
1 tablespoon extra virgin olive oil
800g passata or tinned tomatoes
4 crushed garlic cloves
2 teaspoons fresh rosemary, finely chopped
sea salt and black pepper to taste
2 teaspoons white sugar (or as desired)
225g sliced chorizo sausage
a pinch chilli flakes (to taste)
175ml thick cream
2 tablespoons fresh chopped parsley
500g cooked pasta to serve (any shapes)
- Melt butter in large saucepan. Add tomatoes, garlic and rosemary. Season with salt and pepper to taste. Add sugar to taste to heighten sweetness of tomatoes.
- Simmer for 5 minutes then add sliced chorizo, chilli, cream and half the parsley.
- Simmer until the mixture has reduced by about half; stirring frequently.
- Season to taste and serve with cooked pasta of any shape and garnish with the remaining parsley and parmesan cheese. Fantastic!!
