Chorizo Pasta Sauce

Spanish chorizo sausage adds a mild smokey flavour to this simple and stunning pasta sauce. Creamy and lovely.


Serves: 6 

  • 1 tablespoon extra virgin olive oil
  • 800g passata or tinned tomatoes
  • 4 crushed garlic cloves
  • 2 teaspoons fresh rosemary, finely chopped
  • sea salt and black pepper to taste
  • 2 teaspoons white sugar (or as desired)
  • 225g sliced chorizo sausage
  • a pinch chilli flakes (to taste)
  • 175ml thick cream
  • 2 tablespoons fresh chopped parsley
  • 500g cooked pasta to serve (any shapes)

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Melt butter in large saucepan. Add tomatoes, garlic and rosemary. Season with salt and pepper to taste. Add sugar to taste to heighten sweetness of tomatoes.
  2. Simmer for 5 minutes then add sliced chorizo, chilli, cream and half the parsley.
  3. Simmer until the mixture has reduced by about half; stirring frequently.
  4. Season to taste and serve with cooked pasta of any shape and garnish with the remaining parsley and parmesan cheese. Fantastic!!
