Asparagus, Pancetta and Rocket Linguine

    Sautéed asparagus, pancetta and rocket tossed in pasta with rocket and lemon juice make a simple flavourful dinner with minimal cooking. I often use spaghetti for this and you can substitute any pasta. Serve with grated parmesan if liked.

    Serves: 5 

    • 450g linguine
    • 6 rashers pancetta or bacon
    • 3 tablespoons extra virgin olive oil
    • 2 cloves garlic, crushed
    • 250g fresh asparagus, trimmed and roughly chopped
    • 150g wild rocket leaves
    • 4 tablespoons lemon juice

    1. Cook linguine in lots of boiling salted water for 10 minutes - or till till al dente - then drain and set aside.
    2. Pan-fry pancetta or bacon until crisp. Remove from pan and drain on kitchen paper then break into small pieces and set aside. Clean out any leftover fat from the frying pan.
    3. Pour olive oil into clean frying pan and add garlic and asparagus. Cook over medium heat, stirring for 3 minutes. Add linguine, cook and stir briefly, then pour into a large bowl. Add rocket, lemon juice and bacon and toss.

    Altered ingredient amounts. i used spinach instead as rocket is not is season, add while tossing everything together  -  22 Jun 2009


    Altered ingredient amounts. From the perspective of not being an asparagus lover, I have to say..this was great! I doubled the garlic, and sauteed the asparagus a couple of minutes more than called for. Skipped the olive oil entirely and used the bacon drippings for cooking the veggies. Very light, tasty. I served it with citrus-marinated chicken, but probably will skip that in the future and just go for the pasta. Thanks for the yummy combination of flavors!  -  29 Sep 2008


    This is really good if you cook it just right. I find it easier to cut/crush everything before starting on your bacon and noodles. Otherwise it was fun to make and good to eat!  -  31 Jul 2015
