Honey Peanut Muesli

    Homemade muesli is so much better than store bought. This version uses peanuts, wheatgerm, honey, sugar and vanilla.

    Serves: 6 

    • 3 cups rolled oats
    • 90g chopped peanuts
    • 4 tablespoons wheatgerm
    • 5 tablespoons honey
    • 5 tablespoons brown sugar
    • 4 tablespoons vegetable oil
    • 2 tablespoons warm water
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla essence

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat the oven to 120 degrees C. Lightly grease a baking tray.
    2. In a large bowl combine oats, peanuts and wheatgerm.
    3. In a separate bowl combine honey, brown sugar, vegetable oil, water, salt and vanilla. Stir well and then pour into the oat mixture and stir. Spread out on the prepared baking tray.
    4. Bake for 1 hour stirring every 15 minutes. Remove from oven and cool before serving.

    This is probably a really dumb question, but no matter how long I stare at this recipe I cannot see rolled oats in the ingredient list! For those of you who made it, did you just guess a quantity based on experience or am I blind?? :-) Also, if you are adding dried fruit, I assume that is added after the toasting has been done, and not before?
