Tomato and Basil Pasta or Pizza Sauce

A good basic sauce base where you can adjust the amount of salt and sugar to your own personal taste.

Ingredients
Serves: 6 

  • 3 tablespoons extra virgin olive oil
  • 1 large onion, diced
  • 2 garlic cloves, diced
  • 3 (400g) tins of chopped tomatoes
  • 1/2 teaspoon crushed dried chilli
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons caster sugar
  • bunch of basil leaves, torn into small pieces
  • salt and freshly ground black pepper, to taste
  • grated Parmesan cheese, to serve

Directions

  1. Heat the oil in a saucepan and gently cook the onion and garlic until softened. Stir in the tomatoes, chilli, balsamic vinegar and sugar. Bring to a simmer and cook slowly for 45 minutes to 1 hour.
  2. Stir in the basil and season with salt and pepper. This can be left chunky or blended in a food processor for a smooth sauce. Serve spooned over cooked pasta with plenty of Parmesan cheese.
