    Avocados, strawberries and pecans in a salad with a lemon and cider vinegar sauce, with a little honey for sweetness.

    Serves: 2 

    • 2 tablespoons white sugar
    • 2 tablespoons olive oil
    • 4 teaspoons honey
    • 1 tablespoon cider vinegar
    • 1 teaspoon lemon juice
    • 2 cups torn salad greens
    • 1 avocado - peeled, pitted and sliced
    • 10 strawberries, sliced
    • 1/2 cup chopped pecans

    1. In a small bowl, whisk together the sugar, olive oil, honey, vinegar and lemon juice. Set aside.
    2. Place the salad greens in a pretty bowl and top with sliced avocado and strawberries. Drizzle dressing over and sprinkle with pecans. Serve immediately or refrigerate for up to 2 hours before serving.

    What a great idea to combine strawberries with avocado, both are plentiful and cheap at the moment in the Northern Rivers so we will be making the most of this lovely light salad recipe. I found that substituting the sugar for xylitol made it lower GI and a bit healthier, tasted just as nice too. - 25 Sep 2011
