    A healthy, low fat yet delicious cake, crisp on the outside and moist in the middle and so easy to make!

    Serves: 8 

    • 1 1/2 cups uncooked couscous
    • 1/2 cup raisins
    • 1 1/8 cups (280ml) boiling water
    • 2 eggs
    • 2 tablespoons white sugar
    • 3 tablespoons lemon curd
    • 2 lemons, juiced and rind finely grated

    1. Preheat the oven to 180 degrees C. Line an 20x10cm loaf tin with baking paper. Set aside.
    2. Soak the couscous and raisins in the water for about 5 minutes.
    3. In a medium bowl, whisk together the eggs, sugar, lemon curd and lemon juice. Stir into the couscous. Transfer to the prepared loaf tin.
    4. Bake for 30 minutes in the preheated oven, or until the centre is firm. Cool, then remove from the pan. Remove the paper, slice and serve.

    For nutrition, this recipe deserves 5 stars. Amount Per Serving: Calories: 210;Total Fat: 1.9g; Cholesterol: 58mg; Sodium: 27mg; Total Carbs: 44.2g; Dietary Fiber: 3.3g; Protein: 6.4g.
