A creamy chicken and mango dish with a spicy curried mayonnaise dressing, is something fresh and different that always brings interest and recipe requests. Served cold with a crisp garden or rice salad. This also makes a wonderful sandwich filling.
6 x 200g chicken breast fillets
1/2 cup raisins
1 large (450g) mango, peeled, thinly sliced
2/3 cup good quality mayonnaise
1 teaspoon mild curry powder
1 tablespoon mango chutney
1 teaspoon lemon juice
3/4 cup roasted cashews

Cook chicken in a large saucepan of gently simmering water for 10 minutes. Remove from heat. Stand chicken in cooking liquid for 10 minutes or until cooked through. Drain and cool. Slice thinly.
Mix together chicken, raisins and half of the mango in a large bowl.
Mix together mayonnaise, curry powder, chutney and juice in a small bowl. Season with salt and pepper. Add dressing to chicken mixture; toss gently to combine. Stir in half of the nuts. Transfer to a serving platter; garnish with remaining mango slices and cashews.
