Sweet Spiced Shortbread

Based on a traditional Scottish shortbread this recipe has a rich cinnamon flavour and sweetened with brown sugar.


Serves: 16 

  • 1 1/4 (155g) plain flour
  • 2 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 1/2 teaspoon ground cinnamon
  • 125g butter

  1. Preheat the oven to 160 degrees C.
  2. In a medium bowl, stir together the flour, brown sugar, white sugar and cinnamon. Cut or rub in the butter until the mixture is like fine crumbs.
  3. Pack the crumbs into a ball, then knead by hand until smooth.
  4. On a lightly floured surface, roll the dough out into an 20cm circle. Place the circle on a baking tray and slice into 16 wedges. Leave the circle intact.
  5. Bake in preheated oven for 25 minutes or until the centre has set. Cut the circle into wedges again while it is still warm and transfer to a wire rack to cool.
