    Rice pudding sweetened with dates and sugar. Easy to make in a saucepan on the cooker top. Don't let the heat creep up while you are cooking this or the milk will boil over. Serve hot or cold with stewed or fresh fruit.

    Serves: 6 

    • 2 cups cooked white rice
    • 2 cups milk
    • 2 tablespoons white sugar
    • 15 dates, pitted and chopped

    1. Place the rice into a food processor or blender and process briefly until coarse, but not pureed.
    2. Transfer to a saucepan and stir in the milk, sugar and dates. Cook over low heat, stirring occasionally until the dates are tender, about 20 minutes.
    3. Serve warm or cold.
