I came up with this sandwich on my own after I decided to experiment with some ingredients from the fridge. My husband absolutely loved it! Sprinkling the outside of the sandwich before frying really makes it.

    Ingredients
    Serves: 1

    • 2 slices sourdough bread
    • 2 slices provolone or swiss cheese
    • 2 thin slices ham
    • 1/2 roasted red capsicum, drained and sliced
    • 2 teaspoons butter
    • 2 teaspoons grated Parmesan cheese
    • Mayonnaise for spreading

    Directions
    Preparation:10min  ›  Cook:10min  ›  Ready in:20min

    1. Spread mayonnaise onto one side of each slice of bread. On one slice of bread, place one slice of provolone cheese, then ham, red capsicum, and the other slice of cheese.
    2. Top with the other slice of bread with the mayonnaise facing the filling. Butter the outsides of the sandwich and sprinkle a little bit of Parmesan cheese onto the butter.
    3. Heat a frying pan over medium heat until warm. Fry the sandwich on both sides until golden brown and cheese is melted. You could also toast it under the griller. Cut the sandwich in half and serve.

What a great lunch this was! I replaced the mayo with margarine and toasted it in the flatpress toastie maker. An easy lunch if you have the roasted capsicums on hand in the first place.  -  22 Feb 2009

OMG! Great twist on regular 'ol grilled ham and cheese! I love the italian spin on this classic. I used a smoked ham and a combination of Parmesan and Romano cheeses because who can really decide between the two! I added a little minced garlic to some Hellman's light mayo and my husband was in sandwich Heaven.... Great recipe!  -  17 Sep 2010  (Review from Allrecipes USA and Canada)
