Coconut Chicken with Capsicums

    This is a great beginner recipe for people learning to cook, and quite delicious. Serve over plain white rice.

    Serves: 2 

    • 1 tablespoon vegetable oil
    • 2 chicken breast fillets, diced
    • 1/2 green capsicum, diced
    • 1/2 yellow, orange or red capsicum, diced
    • 1/2 cup (125ml) thickened cream
    • 1/2 cup (125ml) coconut cream
    • 1 lime, zested and juiced

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat the oil in a large frying pan over medium heat.
    2. Brown chicken on all sides then stir in the capsicum, cream, coconut cream, lime zest and lime juice.
    3. Cover and simmer for about 15 minutes or until juices are reduced and chicken has cooked through.
