Stir Fried Coconut Chicken with Lime

    This chicken breast stir-fry is very quick to cook and delicious mix of flavours. Great easy summer dinner.

    Serves: 2 

    • 2 chicken breasts
    • 1 lime
    • oil for frying
    • 150ml coconut milk
    • 1 tablespoon fish sauce
    • 2 teaspoons fresh coriander leaves
    • 50g spring onions

    1. Chop chicken into smallish chunks and leave to marinate in the lime juice for 1 hour in the fridge.
    2. Stir fry chicken till golden brown then add coconut milk and coriander and simmer for 2 min.
    3. Add half the spring onions and fish sauce and cook for another 2 mins.
    4. Add the remainder of the spring onions stir quickly then garnish with a few coriander leaves and serve with rice.

    This was okay. Normally we love anything with coconut milk, but for some reason this just seemed to be lacking depth. I couldn't figure out what it needed to make it great.  -  24 May 2013


    This was really good! I added a couple of tablespoons of desiccated coconut before the fish sauce and spring onion, but next time I'll toast it off before adding the coriander and coconut milk. Tasted great, will definitely be making this again.  -  29 May 2011
