    Tangy, classic lemon curd. Whether you know it as lemon spread or lemon butter, it's still perfect with scones and tea.

    Ingredients
    Serves: 12 

    • 3/4 cup (200ml) fresh lemon juice
    • 1 tablespoon finely grated lemon rind
    • 3/4 cup (185g) sugar
    • 3 eggs
    • 125g unsalted butter, cut into cubes

    Directions
    Preparation:10min  ›  Cook:6min  ›  Ready in:16min 

    1. Combine all ingredients in a 2 litre saucepan. Cook over medium-low heat whisking until thick enough to hold marks from whisk, and first bubble appears on surface, about 6 minutes.

    Wow what a great recipe,very easy to make and tastes absolutely fantastic,used it on sandwiches and on icecream......will try it in a tart next time!!!! Give it a go!!!! - 12 Oct 2010

    Perfect recipe. Tried it with original recipe, with half lemon/half lime juice and also put into a tart. Absolutely delicious whichever way! - 07 Aug 2011
