No Bake Strawberry Cheesecake

    Many cheesecakes are just made with cream cheese but this strawberries cheesecake has yoghurt and cream as well to make it extra rich and smooth.

    Makes: 1 cheesecake

    • 200g digestive biscuits, crushed
    • 100g butter, melted
    • 15g cocoa powder
    • 30g brown sugar
    • 250g cream cheese
    • 60g castor sugar
    • 300g fresh strawberries, mashed
    • 200g strawberry-flavoured yoghurt
    • 200ml single cream, whipped
    • 15g gelatine
    • 3 tablespoons hot water

    1. Combine biscuit crumbs, butter, cocoa powder and brown sugar in a large bowl and mix well. Press into a 23cm spring form tin.
    2. Beat cream cheese and sugar until smooth. Fold in strawberries, yoghurt and cream.
    3. Soak gelatine in water in a small bowl. Then put the bowl over hot water and stir until gelatine dissolves.
    4. Let gelatine cool a bit and stir into cheese mixture.
    5. Pour filling into tin and chill overnight.
