Easy Spinach and Potato Frittata

    This dish is not only delicious but easy to make and versatile. I have done different sized versions of it for brunch, lunch and dinner. I sometimes finish it off under the griller for a couple of minutes to brown the top.

    Serves: 6 

    • 2 tablespoons olive oil
    • 6 small red potatoes, sliced
    • 2 cups spinach, torn or roughly chopped
    • 2 tablespoons peeled and finely chopped shallots or white onion
    • 1 garlic clove, chopped
    • salt and pepper to taste
    • 6 eggs
    • 100ml (1/3 cup) milk
    • 60 (1/2 cup) grated cheddar cheese

    1. Heat olive oil in a medium frying pan over medium heat. Place potatoes in the pan, cover and cook about 10 minutes until tender but firm.
    2. Mix in spinach, shallots or white onion and garlic. Season with salt and pepper. Continue cooking 1 to 2 minutes, until spinach is wilted.
    3. In a medium bowl, beat together eggs and milk. Pour into the pan over the vegetables.
    4. Sprinkle with Cheddar cheese. Reduce heat to low, cover, and cook for 5 to 7 minutes or until eggs are firm.

    This was so easy to prepare and really delicious. It is rare for us to have a totally vegetable meal but we both enjoyed it. Thinking it would also be nice with some bacon chopped up through it  -  22 Apr 2012


    Used different ingredients. I used leek instead of shallots and zucchini instead of some of the spinach. I also added a bit extra garlic and cheese.  -  07 Dec 2010
