Balsamic Chicken and Beans

    These tender chicken thighs are simmered in tomatoes, beans and herbs and the result, an easy and tasty dish!

    Serves: 4 

    • 4 chicken thighs
    • 1 sliced red onion
    • 400g tin chopped tomatoes with herbs
    • 400g tin mixed beans
    • 2 teaspoons good-quality balsamic vinegar

    Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Heat a non-stick frypan and fry chicken, skin-side down, until golden.
    2. Turn over, fry for 5 minutes, then add onion. Fry for 5 minutes more, then add the tomatoes, beans and balsamic vinegar.
    3. Cover and simmer for 10-12 minutes until piping hot. Serve immediately.

    I loved this - it will become a regular with us. Thank you so much for posting it. We didn't have tin of beans so we rinsed off a tin of baked beans.
