This is an easy to make recipe, and it tastes great. A simple cake made from scratch, and flavoured with honey and orange.
I made muffins instead of a cake, just cos it's easier for lunchboxes. I used two oranges for this. Used all the zest (probably about 4 tsp)but there still wasn't enough juice as per the recipe so I added half a cup of apple sauce (I keep it in the freezer as it usually makes low fat cakes more moist anyway). I also beat the eggs and (brown)sugar together till creamy before adding the other ingredients. The mix was a bit wet so I added another half a cup of flour. These were really tasty with a nice strong orange flavour. Great for the whole family, only problem is that they need to be eaten pretty quickly as they dry out a bit! - 23 Aug 2011
