Eggless Date Loaf Cake

    If you like sticky date pudding you will love this cake. It's pretty similar but since it is egg free it has a different texture.

    Serves: 12 

    • 1 cup (155g) dates, pitted and diced
    • 1 cup (155g) brown sugar
    • 60g margarine
    • 1 cup (250ml) boiling water
    • 255g self raising flour
    • 1 teaspoon baking soda
    • 2 teaspoons vanilla essence

    1. Preheat oven to 200 degrees C. Grease and flour a 22cmx12cm loaf tin.
    2. Combine dates, sugar, margarine and boiling water in a large bowl. Stand for 15 minutes. Stir in flour, baking soda and vanilla.
    3. Pour mixture into prepared tin and bake for 45 minutes. Cool before serving sliced and spread with margarine.

    This is so incredibly easy to make - and pretty foolproof as it is turns out moist and delicious EVERY time. I always use butter instead of margarine and I sometimes throw in a handful of chopped walnuts too.  -  28 Apr 2011


    Something else. added teaspoon of nutmeg and cinnamon, pinch of salt and cup of walnuts.  -  19 Apr 2009


    Used different ingredients. Added cinnamon and nutmeg as per other tweak. I also used butter instead of margarine and vanilla extract instead of essence. I have a fan forced and cooked at 160 for 35 mins. I think next time will be 30 mins as it was a bit burnt on top. I'm eating it now and its fabulous! Lovely and sweet and datey.  -  14 Nov 2010
