    This meatloaf is cooked in a base of brown sugar and tomato sauce creating a sweet rich caramelized sauce for the meat.

    Ingredients
    Serves: 8 

    • 1/2 cup packed brown sugar
    • 1/2 cup tomato sauce
    • 700g lean mince
    • 3/4 cup milk
    • 2 eggs
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon ground black pepper
    • 1 small onion, diced
    • 1/4 teaspoon ground ginger
    • 3/4 cup finely crushed water crackers

    Directions
    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Preheat oven to 180 degrees C. Lightly grease a 13x20cm loaf tin.
    2. Press the brown sugar in the bottom of the loaf pan and spread the tomato sauce over the sugar.
    3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place in tin on top of the sauce.
    4. Bake meatloaf for 1 hour, or until juices are clear.

    The meatloaf itself was very tasty and sliced very neatly, however the sauce was overly sweet which detracted from the overall dish and overwhelmed the ginger flavour. Next time I will cut the sugar in half and see how we go. - 14 Sep 2009

    Really nice. I put in half the sugar as suggested below but will put in even less next time as it was still a little sweet. Very easy and flavoursome. - 05 Feb 2013
