Chocolate Crunchy Squares

    A gorgeous slice that has elements of chocolate, coconut and crunch from cornflakes. Serve with a chocolate icing.

    Serves: 10 

    • Slice
    • 185g margarine or butter
    • 90g sugar
    • 90g coconut
    • 60g cornflakes, crushed a little
    • 155g plain flour
    • 2 tablespoons drinking chocolate
    • Topping
    • 250g icing sugar
    • 2 tablespoons drinking chocolate
    • a few drops of cold water

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Slice: Preheat oven to 180 degrees C. Grease a 20cm square cake tin or similar sized slice tin.
    2. Melt the margarine in a saucepan and mix all the dry ingredients together in a bowl.
    3. Add the melted margarine and mix well.
    4. Place the mixture into the tin and press down firmly. Bake in the centre of oven for 20-25 minutes.
    5. Leave to cool in the cake tin, then turn it out, it will crack if you try to turn it out of the tin before it is cool.
    6. Topping: Mix together the icing sugar and drinking chocolate with a few drops of water as needed to make a thick topping. Spread the topping evenly over the top and put in the fridge to set.
    7. When set cut into squares.

    I would probably add less sugar to the recipe next time i make it as i found it to be quite a sweet slice.  -  25 Feb 2011

    Something else. I also chopped a handful of walnuts roughly and pressed into mixture once I had pressed it in to the tray  -  05 Oct 2010
