    This no bake white chocolate cheesecake is so rich and luscious it just melts in your mouth. It is especially good served with a little stewed fruit.

    Makes: 1 cheesecake

    • 100g melted butter
    • 225g digestive biscuits, crushed
    • 1 (11g) gelatine sachet
    • 3 tablespoons water
    • 275g white chocolate, melted
    • 375ml double cream
    • 450g cream cheese, softened
    • cocoa powder, to decorate

    Preparation:1hour  ›  Extra time:8hours chilling  ›  Ready in:9hours 

    1. Mix melted butter and biscuit crumbs together and press into base of a 23cm spring form tin.
    2. Sprinkle gelatine over water in a small bowl. Leave to soften for 10 minutes, then heat the bowl over a saucepan of boiling water until dissolved. Let cool.
    3. Beat together cream cheese and melted chocolate. Beat the cream until soft peaks form. Add the gelatine to the cheese mixture, then gradually stir in the whipped cream.
    4. Pour into prepared tin and chill overnight until set. Dust with a little cocoa powder before serving.
